White Bean Thai Basil Pate

Pates are your friend. Often when I hear that people eat vegan or vegetarian and still feel hungry it is because they are trying to eat vegetables like they did when they eat their meat: Light and on the side. Pate is a dead easy, heavy weight food that you add to burritos, wraps, or on the side with cut veggies, or veggie chips!

The weight in the pate makes you feel full which is essential to eating vegan or vegetarian. You can change up this recipe pretty easy and make it Mexican, Indian or any other flavor that makes your little heart go pitter pat.

Ingredients

  • 1 1/2 cups cooked cannellini or navy beans beans or about 1 can, rinsed
  • 1/4 cup packed fresh thai basil leaves
  • 1 tsp Adobo Seasoning
  • 2 tablespoons Imagine No Chicken Broth
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Paprika to sprinkle!

Instructions

  1. Combine the beans, basil, adobo seasoning, broth, and lemon juice in a food processor. Process until basil is finely chopped and the dip is almost smooth. Season with salt and pepper to taste. If you're using this as a dip, you can top it with toasted pine nuts or fresh basil leaves before serving.

Recipe Notes

If you want a thicker dip use less broth.
This is awesome as a base for wraps, tacos or a dip
